It’s all about cleaning out the fridge to leave town and not wanting the good stuff to be wasted. It all started with my friend Babs cleaning out her fridge and giving me the treasures a variety of chopped Vegetables, Romaine Lettuce, Turkey Bacon, Omega-3 Eggs, Artichoke Lemon Pesto from Crate and Barrel (seriously, I’ve died and gone to heaven!). And of course we’ve mixed it up with our Farmers Market purchases for the week. Here’s what we bought this week:
- Tomato Basil Bread
- Shiitake Mushrooms
- Gruyere Cheese
- Heirloom Tomatoes
- Flavored Olive Oil from Annie’s
Okay, what did we do with it all…
Grilled Panini’s with Tomato Basil Bread, Cheddar Cheese, Heirloom Tomatoes, Cucumbers (make sure they’re tucked in the middle so they stay crunchy and here’s the kicker- Artichoke Lemon Pesto… let me say it again…Artichoke Lemon Pesto (I need to recreate this one).
Chicken Stir Fry with Onions, Sliced Carrots, Snow Peas, Broccoli Garlic and Ginger. And short Grain Brown Rice in the rice cooker.
Wednesday (remember, it’s Wacky Wednesday and that means breakfast for dinner)
Breakfast Pizza! WITH Shitake Mushrooms, Pancetta (Owynn’s selection from Trader Joes), Onions (Vince over-bought on the onions last week), Tomatoes, Basil and one cracked whole egg in the middle. And Parmesan Cheese. This was really yummy!
Savory Bread Pudding from the Greens Cookbook and Turkey Bacon. We used the remainder of the Tomato Basil Bread, Shitake Mushrooms and GRUYERE cheese (one of my favorites)…and Onions (remember, Vince over-bought). And fresh Basil from our herb garden.
Will most likely be a leftovers day. And off to Michigan on Saturday. Don’t worry, Vince, I’ve stocked the fridge for you.
